4th of July!

Happy 4th of July everybody! Even though we don't celebrate it here in Finland, we're sort of celebrating it at my house because of my step dad's background. Today's been one of the hottest days here so far and I've been sunbathing on the trampoline and studying math all day. What a lovely combo..



We had one of our (daily) BBQ's which are definitely one of my favorite things about Summer. Can't wait for my sis to arrive in Finland so that the whole family is here!




For dessert I made these 4th of July Parfaits by just throwing together things we had in the fridge. Luckily they turned out delicious. 

Summer Fruit Pafraits
  • 50g mascarpone
  • 100g cream cheese
  • 1 dl whipped cream
  • 1 dl confectioner's sugar
  • pure vanilla extract
Layer the a glass with berries  - cream - berries - cream etc.

I'm Legal!

Feel like ages since I've written on here. Been super busy with work and preparations for out trip to Los Angeles so I feel like I have no free time at all. Luckily my work ended and right now I'm enjoying my vacation in sunny California.

A few days ago I celebrated my 21st birthday and I couldn't have asked for a better way to celebrate it this year. My b-day's on the 4th but we left to Cali on the 2nd, so I wanted to celebrate with my friends in advance. My and my friend Kirsikka held a joint birthday party for some of our friends.  We celebrated by grilling at her house and just hanging out.

 My actual birthDAY was a few days later when we had already arrived in LA. Twenty-one is a big one here so of course we had to do something special. We went to the happiest place in the world (Disneyland) and spent our day there. The craziest thing happened while we were walking to the ticket stand. We were about to buy the tickets which by the way aren't the cheapest ($125 each) when this man walks over and says "there's 4 of you right? well today's your lucky day, here's 4 tickets for you for free" and just walks away. I mean does that actually happen? Anyway, we had an awesome time in Disneyland and I definitely want to go back someday.

Mother's Day & Tallinn

Happy Mother's Day to every mother out there. We just finished eating our mother's day breakfast and now me and my mom are about to go to Pilates. Ever since I can remember, my sister and I have made our mom breakfast in bed on mother's day. Sure, the breakfast was a little more simple when we were kids but the tradition has stuck. This year was no exception (unfortunately Jen's in LA so she couldn't participate) and my little brother and I got up early and made her breakfast.

 
Fruit salad, chocolate-covered strawberries, avocado cheese omelette and a sandwich with mozzarella, tomato and basil.






Yeeah..let's jut say this mango cheesecake tasted much better than it looked..

Last friday me and my friend Minttu decided to go to Estonia for a day cruise since I got these free tickets from my parents. The only day possible was this friday so after we got done with our night shift  at 6am we headed to Helsinki and got on a boat. Needless to say we were super tired and had planned to get a few hours of sleep on the way there, but I guess I had forgotten about the drunken karaoke singing on Finnish cruises so it was pretty much imposible to nap. After drinking coffee and eating fro-yo we got some much needed energy and the day just flew by.

We went shopping in Rottermann, Viru center and Rocca-al-Mare.


Minttu & I went to eat at this restaurant in Rocca-al-Mare. The goat cheese salad I ate was super good.





On our way back from Estonia. Words can't explain how tired we were at this point but we still had a great time in Tallinn.

Bye bye Athens


Okey, so I'm back in Finland. It sure is crazy what even a short vacation like this one can do. I got to recharge my batteries and now I'm ready to take on work and everything else. Luckily it's almost summer in Finland so it's not that bad.

 Athens was such a beautiful place. I feel like we were on the move 24/7 because there was just so much to see and since I was there for only 4 whole days there was't any time to waste. Luckily our hotel was in the heart of the city so the connections from there were are really good. The fact that the tourist season hadn't begun yet was also great, since the streets and sight weren't that crowded.



The streets surrounding our hotel were full of cozy cafe's and restaurants.

The National garden was right next to our hotel. It was pretty much empty everyday so it was great for morning jogs and just walking around.

Our "tourist day" started with The Acropolis Museus followed by going to the actual thing.






I got this this salad & ice espresso pretty much everyday from this great little coffee house next to our hotel. It's so good and the prices are super low compared to the cafe's in Finland.

Later on we climbed up Mount Lycabettus. The way up there was pretty friggin long but the view was worth it.




As a vegetarian it was really hard to find a restaurant that served vegetarian food at all. I read about Avocado from happycow.com and had to try it out. I'm so glad we did because the food was so good! 



Seriously the best tea I've ever tasted.





The view from the roof top terrace we had breakfast at every morning was so beautiful.

We decided to visit one of the many little islands surrounding Greece called Aegina. There were boats leaving from the pier all the time and it only took an hour to get there after taking the metro to the pier. 







After arriving to Aegina we headed straight to the nearest beach and laid there for the rest of they day.

In the evening after getting back to Athens  we went to walk around and came across this yogurt place called Fresko yogurt bar. They serve greek yogurt and you can top it off with anything you like. Out of the many, many choices I took strawberries, honey and muesli. I can definitely recommend this place! 




My last day in Athens started with an iced espresso and lying by the pool. I still hadn't checked out the stores of Syntagma so that's where I headed. I was on a budget so I definitely had to limit my shopping but I found a few great pieces for the summer and just couldn't resist.

In the evening we just had to go back to eat at Avocado becuase the food was delicious.
